Healthy Stuffed Peppers
I absolutely loved this simple, healthy stuffed peppers recipe! This recipe uses an assortment of colorful peppers, lean ground turkey, brown rice, fresh onion & garlic, as well as natural tomato sauce. This vibrant & delicious meal will surely brighten your mood & taste buds!

1 cup brown rice (we used instant brown rice) 1 lb. lean ground turkey 2 cloves garlic (minced) 1 onion (chopped) 2 green or red bell peppers 2 yellow bell peppers 2 orange bell peppers 2 8 oz cans of natural no-salt tomato sauce 1 tsp Italian seasoning Salt & pepper (to taste) Grated Parmesan cheese (optional) Shredded part-skim mozzarella cheese (optional)
Preheat oven to 350 degrees.
Cook rice
Remove & discard the tops, seeds & membranes of bell peppers. Arrange peppers in baking dish w/ hollowed sides facing up.
Cook & stir ground turkey, garlic & oven in a skillet over medium heat until meat is evenly browned & onion is softened about 5 mins.
Mix turkey, cooked rice, 1 can tomato sauce, salt (we eliminated) & pepper in a bowl. Spoon an equal amount of mixture into each hollowed pepper.
Mix the other can of tomato sauce & Italian seasoning in a bowl & spoon over stuffed peppers – leave a small amount of sauce for basting.
Bake in preheated oven, basting peppers every 15 mins. w/ sauce, until the peppers are tender, about 45 mins.
Sprinkle peppers w/ grated parmesan & mozzarella cheese after baking. (Optional, we most definitely did! 😉)
