Chocolate Peppermint Cookies

Delicious healthy chocolate peppermint cookies made simply in one bowl! These scrumptious treats are a sweet addition to your holiday cookie list & perfect for any upcoming celebrations.

Ingredients
  

  • 1 cup unsweetened almond or nut butter (must be drippy)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 tsp baking soda
  • 1 large egg
  • 1 tsp peppermint extract
  • 1/2 cup chocolate chips
  • pinch of sea salt or 1/4 cup crushed candy cane (optional)

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a large bowl combine all ingredients (yep, that’s right - all in one bowl!).
  • Line a baking sheet with parchment paper or a silicone mat.
  • Roll dough into 1 tablespoon-sized balls & flatten slightly (do not make them bigger as they spread).
  • Sprinkle with sea salt, if using; we eliminated this step.
  • Bake for 7-12 mins. Baking times will vary, so be sure to keep a close eye on them; as you don’t want them to get too crisp or burn.
  • Remove from the oven & let sit on tray for 20 mins (do NOT attempt to remove before then).
  • Sprinkle with crushed candy cane, optional.
  • Place on a rack to cool completely.

Notes

You may keep these, on the kitchen counter, in an airtight container for up to 3 days. They also freeze nicely for up to 3 months.
