Chewy Honey Oat Holiday Cookies

1 1/2 cups almond flour 1 tsp baking powder 1 egg 1/4 cup raw honey 1 1/2 tbsp coconut sugar 1/4 cup avocado oil (can substitute melted coconut oil) 1/2 tsp vanilla extract 1/2 cup oats additional honey to drizzle on (optional)
Combine egg, honey, coconut sugar, oil & vanilla – mix well.
Add almond flour & baking powder – mix together well.
Carefully stir in the oats & place in fridge for 15-20 minutes (Use this time for clean up!)
Take out of fridge & form into balls w/ avocado oil lathered hands or spray palms w/ a little bit of non-stick cooking spray. Press down with palm.
Bake at 350 for 10-15 minutes, depending on how chewy or firm you’d like your cookies.
