Apple Oatmeal Pancakes
These warm & fluffy Apple Oatmeal Pancakes are a delicious, healthy breakfast treat. Filled with sweet apples, wholesome satisfying ingredients, & scrumptious flavors that will undoubtedly put a spring into your morning step.

1 medium egg 1 ¼ cup milk (almond, cashew, soy, oat, cow’s milk) 1 ½ cup rolled oats or quick oats 2 tbsp maple syrup or honey 2 tsp cinnamon ½ tsp baking powder pinch of salt (optional) ½ cup mix of dried fruits & chopped nuts (I used cranberries & walnuts)
Wash & dice the apple.
Add all ingredients to the blender, except for the apple. *Note: add wet ingredients first for easier blending.
Blend on high until the batter is smooth (2-3 mins). *If the batter appears too thick, add a splash of water or milk.
Let the batter rest for 1-2 mins.
While the batter rests, heat a pan over medium heat & coat with cooking spray or coconut oil using the brush.
For each pancake, drop ¼ cup of batter into the pan.
Top the pancake with diced apple, pushing the apple chunks into the batter.
Cook 2-3 mins, until the pancakes are lightly browned.
Flip the pancake carefully with a spatula & cook for another 2-3 mins. Transfer to a plate.
Make sure to coat the pan before every pancake batch to prevent sticking.
Repeat the process with the remaining batter.
Serve pancakes immediately, topped with diced apples, a mix of dried fruits & chopped nuts. Enjoy!
