Roasted Chicken & Chickpea Pita Wraps
If you’re craving Mediterranean flavors & short on time; this recipe will surely fit the bill.
What is tzatziki sauce? Tzatziki is made simply with yogurt, drained cucumber, olive oil, fresh herbs (usually mint or dill), garlic, lemon juice, & salt. Typically used as a refreshing chilled sauce, dip or spread. Since we wanted to save time, we purchased store-bought tzatziki.
If you enjoy your pita bread toasted, I’ve got you covered. After you’ve roasted your chicken & chickpeas, turn the oven off placing the pita bread in the oven for a few minutes. The residual heat will warm your pita up nicely for a deliciously warm chicken wrap. Feel free to skip this step if you’re in a rush or have fresh pitas to use.
Substitutes or Additions for this Recipe:
- Feel free to substitute any variety of flatbread for pitas.
- This recipe is perfect for leftover chicken or you can even grab a rotisserie chicken from the store.
- If you’re not a fan of arugula, simply swap out for any green of your choosing: spinach, watercress, kale, lettuce, spring mix, etc.
- Add more veggies if your heart desired; sliced tomatoes, red onions, avocado, cucumber, zucchini, & the list goes on!
- If preferred, cut your chicken breasts into thin strips, cubes, or diced.
- A great sauce alternative we tried out was incorporating light ranch dressing. Not “Mediterranean” per se, but a wonderful substitute if you run out of tzatziki as we did! 😉
- Want to make this recipe vegan? Simply omit the chicken & add additional chickpeas.
