Ground Turkey Sweet Potato Skillet

We’re headed into sweet potato season, so it’s only fitting I share this delicious one-pot ground turkey sweet potato meal with you!

It wasn’t until last year that my husband and I started to explore more sweet potato recipes – typically I only associated them with traditional Thanksgiving marshmallow casserole goodness. Yum! But now we’ve encountered so many unique ways to create quick, healthy, and hearty meals out of this fiber-rich vegetable.

The perfect combination of ground turkey, sweet potatoes, yellow bell pepper, mozzarella cheese, and various spices was a taste bud hit within our home. There tends to be a misconception about ground turkey being bland and boring, but when paired with the right ingredients you’ll produce a flavorful meal sure to become a family favorite. Also, this one-skillet recipe is super helpful for those busy weeknights; ready in about 35 mins with minimal cooking tools and a stress-free, no-fuss cleanup.

RECIPE SUBSTITUTES OR ADD-IN’S

Feel free to add any other vegetables your heart desires, grape/cherry tomatoes, broccoli, zucchini, carrot, spinach, kale, etc. You can get spunky by mixing up the spices to add your favorite dried or fresh herbs as well.

Ingredients
  

  • 3 small or 2 large sweet potatoes (peeled and diced (about 3 cups))
  • 1 lb. lean ground turkey
  • 1 yellow bell pepper
  • 1 cup diced onion (optional – if you’re not an onion lover like me, omit 😉)
  • ½ cup skim mozzarella (shredded)
  • ½ cup water
  • ¼ cup cilantro (chopped)
  • 2 tbsp olive oil
  • 1.5 tbsp ground cumin
  • 1 tbsp garlic (minced)
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp pepper

Instructions
 

  • In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute and then add ground turkey.
  • Use a wooden spoon to break apart meat and continue cooking approximately 8 minutes until browned.
  • Add cumin, chili powder, salt and pepper. Stir well to incorporate.
  • Add onion and bell pepper, and cook for 3-4 minutes. Then add diced sweet potato and water.
  • Stir and cover with a lid for approximately 6-8 minutes until the sweet potatoes soften. You may add additional water during this process if needed to keep the meat from drying out.
  • Remove lid and add additional salt and pepper if needed.
  • Top with shredded mozzarella and allow it to melt.
  • Remove skillet from heat and garnish with fresh cilantro before serving. Enjoy!
