Quinoa Stuffed Peppers
Bell peppers can be stuffed with an incredible amount of nutritious goodies. In this recipe, we’ll stuff our peppers with quinoa & beans, rich in plant-based protein, along with diced tomatoes, corn, & warm spices. Both vegetarians & non-vegetarians will adore this flavorful recipe!
3 Main Plant-based Ingredients:
Bell peppers: Red bell peppers are the most popular type of pepper to use in stuffed peppers. But, you can use any color of pepper you like. If you prefer a more intense pepper flavor, try using green bell peppers, or even a mix of red & green. I prefer yellow & orange bell peppers as they bring out a sweeter taste.
*You want to choose peppers that are fairly big in size so you have room to stuff them.
Quinoa: This is the main ingredient to stuff the peppers. Quinoa is a seed packed with protein & fiber making it a fantastically filling option. It also contains flavonoids, which have powerful antioxidant & anti-inflammatory effects within the body.
Black Beans: Like other legumes, members of the pea family, black beans are prized for their high protein & fiber content. They also contain several key vitamins & minerals that benefit our health, not to mention they can also help strengthen our bones!
What’s great about these quinoa stuffed peppers is that they’re versatile, great as leftovers, & freeze really well.
Can you make stuffed peppers ahead of time?
Yes! Stuffed peppers are excellent for meal-prep recipes. Follow the recipe, let them cool completely, & store them in an airtight container in the fridge. They will keep well for 3 to 4 days. You can also make the stuffing ahead of time & keep it covered in the fridge for up to 5 days.
Can you freeze quinoa stuffed peppers?
Absolutely! These peppers make for the perfect freezer meal, staying good for up to 3 months. Let them cool & wrap them individually in foil, transferring to a freezer bag or all together in baking dish. To re-heat, thaw in the fridge overnight & bake at 350°F until heated through.
What do you serve with them?
Stuffed peppers make for a satisfying meal on their own, but can also be served up with a variety of sides to make them more of a “complete meal.” You can serve your quinoa stuffed peppers with a side salad, soup, or veggies.
