Pumpkin Mug Cake

This fluffy & moist pumpkin mug cake is a flavorful fall treat that’s quick & easy to whip up. When your sweet tooth calls, this single-serving dessert will surely do the trick!

It’s no secret that I adore desserts. Lately, my social media feed has been flooded with friends posting yummy mug cake recipes, so I decided to try making my first ever mug cake. I will say that I tried a different recipe prior to this and I failed epically! But, I’m happy to report that I was 100% successful with this delicious and simple recipe.

TIPS TO MAKE THE BEST PUMPKIN MUG CAKE:

  • Each microwave model differs, so your mug cake may need longer than 90 seconds to cook completely through. If after 90 seconds it’s not completely cooked, microwave in 15-20 second intervals until done. 
  • If you don’t have pumpkin pie spice on hand, you can add a little cinnamon as I did.
  • For a vegan pumpkin mug cake, replace the egg with a plant-based egg replacement.
  • This recipe can be made in a mug or ramekin. I used a small 8 oz ramekin & it worked out perfectly!
  • If needed, spray mug or ramekin with non-stick spray to avoid your cake sticking to the sides.

Ingredients
  

  • 1 egg
  • 2 tbsp pumpkin purée
  • 2 tbsp almond milk
  • dash of vanilla
  • 4 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 tbsp coconut sugar or maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp pumpkin pie spice or cinnamon
  • Chocolate chips (as many as you’d like – I did about 1 tbsp of white chocolate chips & then added some on top, of course!)

Instructions
 

  • In a mug whisk together egg, pumpkin purée, almond milk, and a dash of vanilla
  • Then mix in almond flour, coconut flour, coconut sugar or maple syrup, baking powder, pumpkin pie spice or cinnamon, and one tablespoon of white chocolate chips.
  • Top with chocolate chips if desired. Yes, please! 😊
  • Microwave for 90 seconds to 2 mins. Heat more if necessary & enjoy your delectable dessert!
